One of our family's favorite dishes is very lazy cabbage rolls. Why very much, you ask. Yes because it is not necessaryfiddling with the cabbage and wrapping the minced meat in leaves, as is done when preparing cabbage rolls.

There is no need to make cutlets and then bake them, as in the recipe for lazy cabbage rolls. And we just cut everything up and stew it, and the taste turns out to be such that you don’t understand whether you’re full or not, and you want more.

  • 600 g mixed minced meat
  • 700-800 g fresh cabbage
  • 2 onions
  • 3 tomatoes
  • 2-3 cloves of garlic
  • 1 large carrot
  • 3/4 cup rice
  • bunch of greenery
  • vegetable oil
  • salt, pepper, seasonings to taste

This amount of ingredients is designed for approximately 8 servings. If you are cooking for one meal for a family of 4 people, take 2 times less food.

Cooking method:

First, let's prepare the vegetables with which we will cook very lazy cabbage rolls...

Peel the onions and cut into small cubes.

Peel the garlic and also finely chop it.

Wash the carrots, peel them and grate them on a coarse grater.

Heat a frying pan, pour in vegetable oil, add onion and garlic and fry over low heat until the onion becomes transparent.

Add the carrots and continue to fry over low heat until the carrots become soft.

While the onions and carrots are fried, prepare the cabbage, rice and tomatoes. Place the rice in boiling salted water and cook for 10 minutes until half cooked. Instead of salt, you can crumble a chicken bouillon cube, the rice will be tastier. Then drain into a colander and rinse lightly with cold water.

Finely chop the cabbage.

Wash the tomatoes, cut each one in half and cut out any excess.

Now grate each half on a coarse grater, leaving the skin behind.

You could, of course, first peel the tomatoes by pouring boiling water over them, and then grate them. But rubbing the uncleaned halves is faster and more convenient, and your fingers will be intact. Salt and pepper the resulting tomato mass to taste.

By this time, the onions, garlic and carrots are already ready. Now take a plate with minced meat and add half of it in small pieces to the frying pan.

Mix. Add the remaining minced meat, salt, pepper and mix again. Close the lid and cook for 10-15 minutes over low heat, stirring occasionally. If you feel that the contents are starting to burn, add some water from the kettle.

Place the cabbage in the pan, add salt, pepper and stir. You can add seasonings that you like. Close the lid and simmer for 10-15 minutes until the cabbage becomes soft and settles a little. At this time, wash and finely chop the greens.
If you are preparing lazy cabbage rolls from young cabbage, then you need to simmer less, for 5-7 minutes.

Open the lid and add rice and mashed tomatoes to the pan.

Cabbage rolls are a dish of minced meat with rice or buckwheat wrapped in cabbage leaves. Lazy cabbage rolls are almost the same, but the most labor-intensive process - wrapping in leaves - has been removed.

Today we will look at a version of not very simple, but not complicated, but very tasty lazy cabbage rolls.

  1. Lazy cabbage rolls in the oven

Ingredients:

  • Minced meat - 500 g (250 g pork and 250 g beef)
  • Cabbage - 250 g.
  • Rice - 100 g.
  • Carrots - 2 pcs. average
  • Onions - 2 large heads
  • Tomatoes - 3-4 pcs. or 1 cup rolled
  • Egg - 1 pc.
  • Flour - 1 tbsp. l.
  • Tomato paste - 2 tbsp. l.
  • Water - 2-3 glasses
  • Garlic - 1-2 cloves
  • Salt, sugar, pepper

Preparation:

1. Finely chop the cabbage. You can cut it larger or mince it, then the taste of cabbage will be practically undetectable. We usually take half of the minced cabbage. Those. 500 g minced meat, 250 g cabbage.

2. Place the chopped cabbage in a saucepan, pour boiling water over it and cover with a lid. Set aside for 15-20 minutes until the cabbage is half cooked.

If you have young or tender cabbage, for example Savoy or Peking cabbage, you don’t need to pour boiling water over it, but simply salt it and knead it a little. If the cabbage is denser, for example winter cabbage, you can pour boiling water over it and cook for 2-3 minutes. Do not boil the cabbage until fully cooked. It will become very soft and the cabbage rolls will not be tasty.

3. Wash the rice, add about 1/2 liter of cold water, bring to a boil and cook for 1-2 minutes until half cooked. I usually use short-grain rice for cabbage rolls, but long-grain rice is also possible. Remove the rice from the heat and leave it in the pan without draining the water for 10-15 minutes.

4. Finely chop the onion. Grate the carrots on a coarse grater. You can increase or decrease the amount of any ingredient to suit your taste.

5. Finely chop the garlic. Of course, you don't have to add garlic. Again, look how you love.

Let's start roasting vegetables

6. Heat a little vegetable oil in a frying pan and put the onions there. Fry the onion for 1-2 minutes until transparent. Place 2-3 tablespoons of fried onion in a separate cup. We will add it to the minced meat.

7. Add grated carrots to the onion in the pan. Fry for another 2-3 minutes. Place approximately 1/3 of the fried vegetables in a separate cup. We will place them on the bottom of the mold so that the cabbage rolls do not burn.

8. Add a tablespoon of flour to the remaining vegetables in the pan. Add flour to make the sauce thicker. You can do it without flour. Let's mix.

9. Add tomato paste. Tomato paste gives a beautiful color to the sauce and adds flavor. Mix everything again.

10. If you have fresh tomatoes, pass them through a meat grinder and add to the sauce. Mix.

11. Add salt to taste and be sure to add sugar to taste. Tomatoes and tomato paste are sour, so you need a little sugar.

12. Pour in 2-3 glasses of water, you can first pour in less and then add. Let it simmer for another 2-3 minutes.

13. Add black pepper to the sauce, add red pepper if you want. At this point you can add sour cream, but we cook without sour cream, adding only tomato paste. I proceed from the fact that it is better to serve sour cream separately with ready-made cabbage rolls. He who loves will add to himself.

14. If you do add sour cream, then after adding it to the sauce, let it boil for 2-3 minutes and remove from heat.

15. Taste the sauce, add if something is missing. If desired, add finely chopped garlic to the sauce. The sauce is ready. Remove from heat and set aside for a while.

Making lazy cabbage rolls

16. Our cabbage has already become soft. Remove from the pan with a slotted spoon, squeezing directly into it. There is no need to squeeze too hard to make the cabbage dry. Squeeze so that it is not too wet, but not completely dry.

17. Our rice is also ready, cooked until half cooked. It should absorb almost all the water. If not absorbed, drain off excess. Place the rice in a separate cup and let cool.

18. Add minced meat to the cabbage, set aside fried onions, beat in one egg. Let's add salt and pepper.

19. Mix everything well until smooth.

20. Lastly, add the rice, boiled until half cooked. Rice should not be hot, it should be warm. Mix everything well again. The minced meat should not be dry. The cabbage rolls should stick together well. If they are a bit dry, add some cabbage water or just boiled water.

21. Place the reserved, fried vegetables on the bottom of the form in which we will bake the cabbage rolls.

22. Wet your hands with water; if you are wearing food gloves, moisten them with water so that the cabbage rolls do not stick to your hands. We sculpt them quite large.

23. Place the cabbage rolls in the mold. Try not to let them stick to each other. If they are still very tight, carefully separate them with a knife. Place them in an oven preheated to 200° for 20-25 minutes.

Step 4: fry onions and carrots.


Take a frying pan, pour vegetable oil into it and put it on medium heat. Using a tablespoon, place chopped onions and carrots from a bowl into a heated container. Fry the ingredients until golden brown, constantly stirring them with a wooden spatula. Attention: It is not recommended to overcook vegetables, as they will still be stewed with minced meat. After this, set the pan off the heat to the side.

Step 5: prepare the dill.


It is very important not to forget to add dill to the prepared minced meat, as this ingredient will give our dish a special taste of young herbs and will also serve as a decoration for the entire dish. Take the dill and rinse it under running water. Lightly shake the greens from the water and transfer to a cutting board. Using a knife, finely chop the dill and place in a separate plate.

Step 6: prepare minced meat for lazy cabbage rolls.


Transfer the minced meat into the pan with the fried vegetable mixture. Place the container over medium heat and lightly fry, stirring with a spatula. This process takes 10-15 minutes.
Turn off the heat and let the minced meat cool slightly.
Then add finely chopped dill to it. Be sure to pepper and salt to taste and mix again.

Step 7: prepare the cabbage.


Take a head of cabbage, rinse it under running water and place it on a cutting board. Using a knife, cut off a few of the top leaves and set aside. They will be useful for placing on the bottom of the pan when we cook lazy cabbage rolls so that the bottom of the dish does not burn. Using a sharp tool, cut the head of cabbage into two halves, and then cut each into thin strips. Attention: The thinner the cabbage strips, the better. Therefore, for this you need to take a fairly sharp knife.

Step 8: stew the cabbage.


Pour vegetable oil into another frying pan and add chopped cabbage. Place the container on medium heat and simmer the ingredient, stirring it with a wooden spoon. When the cabbage becomes slightly soft, set the pan off the heat to the side.

Step 9: Prepare the tomatoes.


Place tomatoes in a pan of boiling water for 5 minutes, and then take them out using a slotted spoon and transfer them to a clean plate. When the ingredient has cooled, remove the skin and cut it into small pieces to make the tomatoes easier to work with.
Transfer the peeled tomatoes to a blender and grind them at medium speed until they form a liquid mass.

Step 10: cook lazy cabbage rolls in a saucepan.


Take a deep saucepan and lay out whole cabbage leaves so that they completely cover its bottom. Then, using a tablespoon, spread some of the stewed cabbage onto the cabbage leaves so that it lies in a layer at the bottom of the container.
The second layer of our dish will be minced meat. Therefore, we will place it in the pan on top of the stewed cabbage so that it completely covers it. Using a tablespoon, spread our ingredient evenly over the surface of the first layer.
The third layer will be the remaining stewed cabbage, which we also spread evenly on the second layer.
Take a container of tomato puree and pour it into the pan onto the third layer. Cover the filled pan with a lid and set to simmer over medium heat for 30-35 minutes.
After this time, our dish will be ready. Attention: From time to time the lazy cabbage rolls can be gently stirred with a spoon.

Step 11: Serve the lazy cabbage rolls in the pan.


Lazy cabbage rolls can be served hot. Place them in a deep dish for serving. It will be very tasty when you season our cabbage rolls with a little chopped garlic on top. You can serve sour cream, cream or mayonnaise with lazy cabbage rolls. Enjoy your meal!

There is no need to unwrap anything here - the cabbage is cut into small pieces and it is almost invisible in the cutlets, which completely satisfies the “little whims”.

  • minced meat (pork + beef) - 500 g;
  • rice - 60 g;
  • cabbage - 400 g;
  • onion - 1 head;
  • dill - 3-4 sprigs;
  • salt, pepper - to taste;
  • flour (for breading) - 4-5 tbsp. spoon;
  • vegetable oil - 30-50 ml.

For the sauce:

  • sour cream - 200 g;
  • tomato paste - 5 tbsp. spoon;
  • salt - to taste.

  1. Boil the rice until almost done. To do this, wash the rice grains and fill them with cold water (the liquid should be 1-2 fingers above the level of the rice). After boiling, cook over low heat for about 15 minutes.
  2. In a spacious container, combine minced meat, finely chopped onion, rice and chopped dill.
  3. Shred the cabbage into strips or cut into small square pieces.
